Meet your guide at Refugio State Beach north of Santa Barbara and receive your kayaking gear, including a wetsuit, paddle jacket, life vest, and helmet. Once outfitted, you're provided a thorough kayaking lesson on shore, including instruction on entering and exiting the surf.

When you're on the water and feeling comfortable with your paddling skills, set off on a 3-mile (4.8-km) journey. You'll stop amid pristine kelp beds to learn about marine ecology and the Santa Barbara Channel. Keep an eye out for dolphins that often swim and play alongside the kayaks.

At midday, stop for lunch served on a secluded beach. After time to swim, venture back to shore while participating in a series of kayak challenges and games.
